THE FARM

Since 1972 the farm Duclos guarantees quality and products of the highest level. Their Fontina cheese (the farm is part of the Consortium of the producers and protection of DOP Fontina), is requested by the best restaurants and gastronomies of Aosta Valley and is synonymous with taste and tradition.

Their cattle spend the spring and the summer in theGran San Bernardo Valley, the pastures and the fresh grass allow Chez Duclos to obtain a very high level milk, to transform it in excellent products is the knowledge of this historical firm that has specialized during the years in the production of different cheeses and dairy products. With the passing of time there have been evolutions in the production process of cheeses and dairy products in general, but the procedure of production and transformation of Fontina cheese remains the same as always. This allows the typical characteristics of a product rich in history to be maintained.

CHEESES AND MUCH MORE

The company takes care of the breeding of the cows of the breed “pezzata rossa valdostana” and, for their maintenance, also of the whole part of the forage cultivation, very important for the production of the fontina cheese.

The milk obtained from the cows is then processed into cheese and dairy products.

The fresh products are put into the cells and sold, while the hard-rind cheeses are placed in the various maturing warehouses, where they are salted and kept until they are sold.

The passion and experience acquired over the years has led to the decision to diversify the production, offering customers a variety of products such as yoghurt, many fresh cheeses, mozzarella fior di latte and of course Fontina DOP.

VISITS

The farm offers the possibility to visit the cowshed and the laboratory for groups and by reservation at a cost of 20€. Families who go to the shop in Roisan are also given the possibility to visit the stable for free.
